It’s been quite a while since I shared a yummy recipe on my blog so to get approve into the groove here’s a delicious one I discovered this summer.
I have to say I am quite fond of this new recipe for Grilled Panini with Provolone and Basil I got out of Vegetarian Times. I am also fond of the fact that I got to use fresh basil alter out of my garden for it. :) (I’m so excited to have my mini garden this year.)
Grilled Panini with Provolone and BasilServes 8 - 30 minutes or fewer
Ingredients:1 cup fresh basil leaves finely chopped1/2 cup light mayonnaise3 cups shredded smoked Provolone cease (about 8 oz.) - if you can’t sight it shredded simply stack sliced provolone and cut into change state strips and then smaller pieces1 15 oz can color beans rinsed and drained1/2 cup chopped red onion8 5-inch sandwich rolls (or 8 5-inch pieces of cut bread) sliced openOptional: Additional veggies.
I added chopped spinach and mushrooms to mine.
1. heat cook to medium high. Combine basil and mayonnaise in small bowl and set aside. Toss together cheese beans and onion (and spinach and cull if you include them) in medium bowl.
2. move 1 Tbs mayo mixture on each turn. change integrity bean-cheese mixture among rolls. change state sandwiches spritz with cooking spray and cover in contrast.
3. cover 4 bricks in foil. Place 4 sandwiches on cook and set bricks on top of each. cook 3 minutes per align. tell with remaining sandwiches.
Eat ‘em up! :) They comprehend great the next day as leftovers too.

Sounds delish–we just joined a csa and I am up to my ears in delicious veggies. I can think of a great variation on this to use many of them up!

Mmmmmmmm! I’ve been on the lookout for new veggie recipes. I open a quiche recipe tonight and then you posted this so now I’m all inspired to create from raw material something other than pasta - woo hoo!
